Janež je začimba, ki ima sladkast okus, malo spominja celo na mentol. Do zdaj sem janež jedla samo na janeževih upognjencih, ugotavljam pa, da je janež vsestranska začimba. Uporablja se lahko v čajih, bombonih, janežev poparek pomaga celo pri slabi prebavi, slabem zadahu, pomanjkanju apetita in še marsikje.
Dolgo časa mi ni bilo jasno, kako so lahko tako lepo upognjeni, prvotno sem mislila, da se tako upognejo v pečici, potem sem spraševala svojo teto, ki mi razlaga, da jih upogiba z valjarjem. Mama ima za upogibanje drugačno tehniko. Na pladenj gre 12 piškotov, zato si vnaprej pripravi 12 kozarcev. Ko so pečeni, jih hitro upogne, tako da jih rahlo potisne v kozarce in voila, lepo upognjeni janeževi upognjenci.

Janeževi upognjenci                               

Sestavine:
5 jajc
toliko moke (ostre), kot tehtajo 4 jajca
toliko sladkorja, kot tehtajo 4 jajca
janež za posip

Za takšno maso sem dobila 56 upognjencev, kar je skoraj 5 polnih pladnjev. Recept si prilagodite po potrebi. Sladkor (v našem primeru ga je 230g) penasto umešajte s 5-imi jajci. Stepajte tako dolgo, dokler ne dobite bledo rumene mase. K tej masi postopoma dodajate moko, ki jo nežno vmešate v jajca. Cilj tega je, da v  maso spustite čim manj zraka. Dajte v hladilnik za pol ure, da moka nabrekne. Segrejte pečico na 200° C/ 390 F in pripravite kozarce. Pekač obložite s peki papirjem, nato nanj, s pomočjo dveh žlic, nanesite maso v precejšnjem razmahu, ter vsak kupček mase posujte z janežem. Pecite 8 min. Po 5-ih minutah pečenja, si pripravite drugi pekač, da lahko potem zamenjate. Še vroče rahlo potisnite v kozarce, (ki ste si jih prej pripravili) da dobite lepe upognjene piškote.

Anise Cookies
Anise is a herb, that has a sweet taste, maybe similar to mentos. It is a very versatile herb, that can be used in tees, candy, it is even good for bad digestion or bad breath. Today I will show you a recipe for Anise cookies. It`s really hard to translate the exact term that we use in Slovenia for these cookies. »Upognjenci« means bended cookies and if you look at their shape, you get a pretty good idea where the name comes from. Hope you enjoy them.

Ingredients:
5 eggs
weigt of 4 eggs = the amont of flour
weigt of 4 eggs = the amont of sugar
anise for sprinkling

From this batter I got 56 cookies, which is about 5 full plates. You can adjust the recipe to your liking. Mix the sugar with the eggs until they are fluffy and pale. Slowly add the flour, but be carefull not to let to much air in to the eggs. Put it in the fridge for half an hour so that the flour can absorbe some of the liquid. Heat the oven to 390 F and prepare 12 glasses (see pictures). With the help of two spoons, spoon the batter on the pan, that we have protected with some parchment paper. Sprinkle each cookie with anise. Bake for 8 min. Half way our baking prepare yourself a second tray, so you can exange plates when you open the oven. When they are still hot, gently, but quick (they would otherwise dry, and you won`t be able to bend them) push them to the sides of the prepared glasses.
