Zeliščna majoneza / Homemade herb mayonnaise

V petek so na jedilniku bile ribe in regratova solata. Vsak drugi dan bi mi to bilo super, tisti dan pa sem se odločila, da hočem nekaj za povrh. Zato sem naredila majonezo. Nekih posebnih zelišč nisem imela, zato sem uporabila timijan, bom pa naslednjič (ko mi zraste) poskusila tudi s meto, mogoče tudi s baziliko. Recept je zopet sila preprost, odličen če hočete navdušiti in seveda dober. Zopet vpletam svojo sestro, ki sicer sploh ne mara majoneze, a glej ga zlomka, tale moja varianta ji je pa bila všeč:)

Glasbena podlaga: Think Twice

Za majoneze potrebujete:
1 rumenjak
1 žlička gorčice
100 ml olivnega olja (lahko uporabite katerega bolj nevtralnega)
1/2 jedrca  česna (lahko uporabite celega, jaz nisem hotela, da okus česna prevlada)
šop timijana (ali bazilike, peteršilja, meta,…)
sok 1 limone + za ribo
sol
poper

Rumenjak in gorčico narahlo premešajte, nato vzemite metlico in začnite mešati, vseskozi pa počasi dodajajte olje. (pomembno je, da ne vlivate olja v preveliki meri, saj se bo olje ločilo od samega rumenjaka, kar nočete). Ko se vam masa začne gostiti, lahko olje vlivate v večji količini. Ko je masa gosta in lepo svetleča, jo dajte na stran. Na drobno narežite timijan in česen, posolite in dodajte k jajčni kremi. Iztisnite sok pol limone, solite, popoprajte in poskusite, če vam je okus všeč je to to, sicer dodajte še sok limone in soli. Limona je potrebna, saj omili okus olja in majonezo naredi ‘lahkotnejšo’.
Postrezite zraven ribe, lahko jo uporabite tudi kot nadomestek kupljene majoneze (v sendviču, v francoski solati,…)
* Pomemben del pri majonezi je torej prvih 30 s ko počasi vlivate olje in pa dejstvo, da samo majonezo solite, ko je krema že narejena, nič prej.
** če se vam ne ljubi mešati na roke, lahko mile volje to naredite tudi v multipraktiku, mene se je zahotelo malo telovadbe🙂

Homemade herb mayonnaise
On Friday’s menu there was fish and dandelion salad, and every other day I would be thrilled about it, but on that day I need it something on the top. So I made mayonnaise. I didn`t have much of a herb collection at home, so I used thyme, which is always on our garden. Next time I think I will try it with mint or basil, but I have to wait for them to grow🙂 The recipe is really simple as always, and it is a great way to impress, plus you can use anything for it, like I said basil would work wonderfully, maybe some anchovies, or chilli even, you name it. Even my sister loved it, even though she doesn`t eat store bought mayonnaise.

For the mayonnaise you will need:
1 egg yolk
1 tsp mustard
about 1/3 cup olive oil (or any other  more neutral oil)
1/2 garlic clove (you can use the whole garlic, if you want a more garlic flavour)
about 3 tbsp fresh thyme (or any other herb you have)
juice of 1 lemon+ some for the fish
salt
pepper

Mix the yolk with the mustard, then grab a whisk and start whisking, all the while adding the oil very slowly. When the cream starts to come together you can add more oil while mixing. When you get a creamy and glossy cream, put it aside. Chop the garlic and thyme very finely, salt it, and add it to the mayonnaise. Squeeze half of the lemon juice, season it, and taste it, if it taste good, serve it, if not, just add some more lemon juice and salt, it will make a world of difference. Serve it with fish or use it like you would normally use your mayonnaise (in a sandwich, salad,…)
*first 30 s are crucial when making the mayonnaise, because you have to be very careful not to pour to much oil in at once, and the fact that you only season the mayonnaise at the end, not at the beginning, like everything else.
** you can always make mayonnaise in a stand mixer, I just wanted an exercise🙂
