Že nekaj tednov nazaj sem nabrala bezeg in naredila sirup, potem sem zopet nabrala bezeg in naredila še več sirupa. Seveda imam sedaj izobilje sirupa. Iz njega si večino časa delam sok ampak sedaj, ko so na vrtu tudi sveže jagode, melisa in meta, sedaj je čas za sorbet. Recept je narejen bolj po občutku kot kaj drugega, je pa izpadel zelo dobro, če se smem pohvaliti. Kot mogoče opazite, vam danes zopet predstavljam novi video (hvala Rok), ki vam pokaže sam postopek izdelave. V besedilu bom priložila še recept za bezgov sok, da bo vse lepo na enem mestu 🙂

Bezgov sirup
50 bezgovih cvetov
5 litrov vode
4-5 kg sladkorja*
120 g citronske kisline
3 bio limone, narezane
šop melise in mete (po želji)
* sladkor, tako kot citronska kislina deluje kot konzervans, manj bo sladkorja manj časa bo sirup zdržal. Če delate sirup v manjši meri in hočete privarčevati s kalorijami, lahko količino sladkorja zmanjšajte.
Cvetove preglejte in očistite, če so kje kakšne žuželke (vendar ne pod vodo). Namakajte cvetove, limone, meliso in meto v vodi kakšnih 30 ur. Precedite skozi krpo in iztisnite sok limon. V vodo dodajte sladkor in citronsko kislino ter celotno mešanico segrejte tam nekje do 70 °C . Prelijte v naprej pripravljene steklenice.
Bezgov jagodni sorbet
6oo ml vode
100 ml belega vina (jaz sem uporabila rumeni muškat)
200 ml bezgovega sirupa
šop nasekljane mete in melise
sok 1 limete
sok 2 limon
pest jagod, narezanih
V nizki posodi zmešajte vse sestavine in za čez noč postavite v zamrzovalnik. Rahlo odtalite, nalomite in zmiksajte v multipraktiku. Ponudite s svežo meto in jagodami.
Elderflower cordial and Strawberry – Elderflower sorbet
A couple of weeks ago I picked some Elderflower heads and made syrup, then I picked some more Elderflower heads and made even more syrup. Of course now I have a lot of Elderflower syrup. Usually I just make juice with it, but with all the strawberries, mint and melissa on the garden I just had to make sorbet. It turned out really tasty and refreshing, so I do recommend it.Today I also have a video for you (the first one), so I hoope you enjoy it 😉 I will also be posting the recipe for the Elderflower cordial, just so I have everything in one place 🙂
Elderflower cordial
50 Elderflower heads
5 litres water
5 kg sugar (or 4-4,5kg*)
120 g citric acid
3 bio lemons
bunch of mint and melissa (optional)
* reducing the sugar amount will make the syrup less thick, but it will have less calories, so it is up to you.
Clean the Elderflower heads, but not with water. Soak the heads, lemon, mint and melissa under water for 30 hours. Pour everything in a cloth and strain it. To the flavoured water add sugar and citric acid and warm the mixture up to 158 °F / 70 °C and pour it in the prepared bottles.
Elderflower & Strawberry sorbet
600 ml water
200 ml Elderflower sirup/cordial
100 ml white wine ( I used sweet wine)
bunch of strawberries, cut
bunch of mint and melissa, choped
juice of 1 lime
juice of 2 lemons
Put all the ingredients in one pot and freeze it overnight. Let it defrost a bit, the break it up and put it in the mixer. Mix to your liking. Serve with some mint and strawberries.
